Early Summer Sunday Dinner

The fan club and I were planning on spending the evening out day.  So Sunday dinner needed to be quick, but not supersonic. I did have a bit more than 1 hour to get things completed.

Penne with Baby Eggplant



The eggplant was sautéed grape tomatoes, hint of green pepper and garlic. Topped the dish with some sliced bocconcini mozzzarella balls. This pasta tasted better the day after as the flavors just melded together after a while.


Cod in light vegetable broth


You have probably seen dishes similar to this.  The Cod fish was seasoned , rolled up and cooked in high edged pan with a very light vegetable broth . A few asparagus tips were added towards the end of th cooking time. Yellow peppers, garlic , herbs flavored.
