Summer Salading - Another Twist
What do you make on a summer weekday ,when you get home tired and hot ? Salads. Here's another one for you which helped me celebrate happiness of avocados.
Summer Avocado Tomato Salad
Any kind of white wine vinaigrette will do work for this salad. Just make sure to emulsify it well so that it coats the tomatoes and avocado slices well. A few basil leaves will add a bit of tang while, large chunks of fresh mozzarella will balance things out.
Great with some crusty baguette, and a chilled white.
