Celebrating the Omelette Collection


Omelets (also spelled omelettes) are wonderful. My preference is to use eggs whites, finding that whites alone can truly bring out the flavors of the other ingredients and especially the spices.

Always remember to serve with a drizzled line of fresh, extra virgin olive oil.
