Seeing Red. In a good way

I wanted to play the color theme tonight. Red, the color of passion , was on my mind.  Red reminded me of Sicily with its fiery Etna.  And of war of course, the thing that nations do when they just "can't get along".  My temperament leaned towards peace, and peaceful coexistence.  After all, I was home in my oasis, cooking for the fan club. So love, not war,  and passion for life, was what was training and guiding my kitchen hands  

After a quick pantry check, my pantry pointed me to a basic vegetarian pasta that is quick and easy to make and will keep your guests very happy.

Farfalle ai Peperoni Rossi



Ingredients
1 lb of Bowtie pasta (imported, imported , imported !! ) 
Two medium sized, sweet red bell peppers
Crushed Tomatoes
1/2 cup of Sun Dried Tomatoes, cut into strips
1/2 clove of garlic 
1/2 cup of smoked mozzarella, thinly sliced
EVOO, S/P
Pecorino Romano

Cut the peppers in to thin slices, and sautee' for a few minutes. Add some crushed tomato sauce. Cook until tender. Adjust sauce with some pasta water if needed. Adjust seasoning. 

I topped the pasta with some slivers of smoked mozzarella. 
One more thing.  A Dolcetto d'Alba  made for a perfect wine .
