Breakfasting with flavor

Breakfast can be boring. Toasted bread with danish butter ?  Well that works, but not every day . This morning, I decided on using some left overs to prepare a tasty morning treat.


Sauteed Artichoke and Mushroom Omelet
Breakfast Omelet


Ingredients
Egg white
Sautee of Artichoke Hearts and Mushrooms
Yellow Bell Peppers
Chili peppers, diced  (optional)
S/P, EVOO

Reheat, the vegetable sautee.  Splash with white wine. Flash fry to evaporate any excess fluids. Add egg whites, cook with a lid so that you do not need to flip  or fold. Serve with toast, buttered toast that is
