Aussie inspiration
You might be asking :Two posts in the same day? Well, yes that's correct. One for lunch , and one for dinner. I went for an Aussie theme. twice. Australian lamb paired with Australian Wine, mate !
Hard Cider and caper Short Lamb Chops
Ingredients
6 lamb chops, cut thick, and short
1 cup hard apple cider
1/4 cup of capers in vinegar
Fresh oregano, or Thyme
S/P, EVOO
Garlic
White potatoes, thick slices or quartered
Ratings: Not surprisingly this dish was more appreciated the day after. The flavors developed and the fan club knew it.
Recipe:
Preheat your oven to 325F-350F. Start by browning the meat after seasoning with S/P and minced garlic. After browning on each side, add 1 cup of hard apple cider , reduce by half. Add capers reduce again by half.
Remove meat from pan , and place in baking tray with white potatoes and all juices from pan. Sprinkle with salt and pepper. Add 1 cup of water. Cover with thin foil and bake up to 1 and 1/2 hours. Remove foil , bake for an additional 5 to 15 minutes, to get some light coloring on the meat.
Served best with with a robust Aussie Shiraz .
