Seafood with a Bollywood Twist

This is one of those dishes that you just set and let cook. Slow simmering for about 2 1/2 hours, and the calamari will become as tender as butter.

When making this dish , add the ricotta to the sauce towards the end , and in modest quantities.  A pinch or two of ground coriander provides  hint of unknown mystery to your palate.

Any crisp white wine will work with this . Pour  yourself a  Sauvignon Blanc with dish, you can't go wrong.
